Two kitchens. Twenty-three siblings. One line

Before there was a restaurant, there were two houses in Jerez, Zacatecas.

In one, Ricarda and Don José raised fifteen children. In the other, Josefina and Pedro raised eight. Twenty-three siblings across two kitchens, and in both of them the rule was the same: nobody leaves hungry. Every plate was full. Every guest got the door held for them.

We did not design that standard. We inherited it.

José Ramírez was the seventh of those fifteen. Martha came from the Delgado house. They carried their mothers' recipes north, and in 2002 they opened the first Los Dos Potrillos in Centennial with $5.18 left in the bank. José told those first customers that if they didn't like the food, he'd buy it for them. Nobody ever took him up on it.

The name came from their two boys Danny and Luis. Los Dos Potrillos. The two colts.

José and Martha built the mom-and-pop and the first two restaurants. Danny and Luis built the four that followed. Six locations now Centennial, Littleton, Highlands Ranch, Parker, Castle Rock, and Denver  and the recipes on every one of those plates are three generations deep. They predate the restaurant by a full generation.

That's what we mean by real Mexican food. Not a concept. A line.

The journey has never been a ladder. It's a circle back to the same kitchens, the same standard, the same full plate. Come in once and you're a guest. Come in twice and you're family.

Every first-time guest is a future regular.
